| Baked or Grilled Chicken | |||||||||
| You Will Need: | |||||||||
| 1 | whole | Fresh Fryer Chicken | |||||||
| 1 | shaker | Sycamore Hill Famrs Poultry Dry Rub | |||||||
| Any flavor Mop & Sop BBQ Sauce | |||||||||
| To Marinate: | |||||||||
| Wash and drain chicken, cut chicken in half through the back and breast, | |||||||||
| sprinkle Poultry Dry Rub evenly on both sides of the chicken halves | |||||||||
| Place chicken in a covered container and refrigerate a couple hours or overnight | |||||||||
| If you don't have time to marinate no problem, season then bake or grill as you wish. | |||||||||
| To Grill: | |||||||||
| Grill halves over medium heat with your favorite type of wood chips, Hickory, or Mesquite. | |||||||||
| If you use a propane grill, place aluminum foil on the primary surface to make a heat shield | |||||||||
| and place meat on next rack up. Cook until meat is done. | |||||||||
| If you are going to sauce the chicken: | |||||||||
| Then remove the heat shield and apply a generous coating of Original Mustard Sauce, | |||||||||
| Pert' Near Hot Mustard Sauce or Sycamore Red BBQ Sauce. Thet're great mixed too. | |||||||||
| Allow to cook on and two coats will be best cooked on. | |||||||||
| To Bake: | |||||||||
| Heat oven to 350o F and lightly oil a baking dish. Place chicken halves skin side up and | |||||||||
| place in oven for 1 hour. After 1 hour, turn halves over and set timer for 20 minutes. | |||||||||
| When time is up, turn halve back over and leave for 5 more minutes. | |||||||||
| If you are going to sauce the chicken do so after turning the halves back up and let cook on. | |||||||||
| Cut the leg quarter from the breast and/or cut drumsticks and wings from quarters. | |||||||||
| SHF Poultry Rub is great on chicken, turkey, quail, and dove no matter if baked, fried, grilled | |||||||||
| smoked, or boiled. | |||||||||
