| Lentil Gumbo Soup | ||||||||||
| 1 | lb. | Dry Lentils | ||||||||
| 2 | lrg | Onions - Chopped in Medium pieces | ||||||||
| 1 | lb. | Smoked Sausage | ||||||||
| 1 | lb. | Frozen or Fresh Okra - Cut in rings | ||||||||
| 1 | tsp | Southern Seasoning | ||||||||
| 3 | Qts | Water | ||||||||
| Place 3 quarts of water on to heat in a 6 qt. dutch oven. Add Southern Seasoning, Lentils and bring | ||||||||||
| to a boil. While water is heating; chop onion in medium pieces and add to water. Cut sausage into | ||||||||||
| halves then quarters lengthways and chop into small pieces and add to mixture. Let soup come to | ||||||||||
| a boil and then add okra. Cook for about 30-45 minutes or until Lentils are tender and mixture has | ||||||||||
| thickened to a gumbo status. | ||||||||||
| Serve with rice and cornbread, garnish with slices of onion or scallians. | ||||||||||
